Recipe: Crispy Sea Bass & Sticky Tomatoes


We really enjoy eating fish but it's something we don't cook all that much, mainly because of the smell through out the house it creates, but every now and then it's worth a bottle of febreeze! This dish is perfect for a midweek supper, in general it's something we cook up after a gym session as its a good mix of protein, carbs and veg and is quite a hearty meal without making you feel sluggish.

You'll need: 2 sea bream fillets, 1 white onion sliced, finely chopped garlic clove, halved cherry tomatoes, new potatoes, butter, white wine vinegar, chopped parsley.


Halve the new potatoes and add to a pan of salted boiling water for around 15 minutes. Once cooked drain, add butter and leave to one side. 

Meanwhile add some oil to a medium heat frying pan before throwing in your onion and garlic. Fry for around 10 minutes so they're just starting to soften, throw in your cherry tomatoes and cook for a further 10 minutes with a little olive oil. Your tomatoes will soften giving you a nice jammy chutney style sauce for your dish.

Heat another pan with a piece of oiled grease proof paper in the top, season the paper with salt and black pepper and then fry your sea bream on the top for 3 minutes on each side - skin side down first.

Whilst your fish is cooking add a good glug of white wine vinegar to your tomato & onion mixture, along with a sprinkle of sugar. Cook for a further 4 minutes.

To plate, add your potatoes & tomato mixture to the bottom of a pasta bowl, top with your cooked fish and sprinkle with parsley.
