Baileys, Pistachio & Fudge White Chocolate Balls Recipe

As you probably know already, especially if you follow me on instagram, I'm a huge foodie, I love baking & cooking, eating out at fancy new places and I work in food too. With that in mind, and Taste of Dublin right around the corner (would you believe it's June next month already?!) I'm teaming up with Chill Home Insurance to bring you an Irish inspired recipe!

You'll need: 200g of white chocolate, 2 fudge bars, half a bag of pistachios and a shot of Baileys Irish cream liquor.

To make: Melt your white chocolate, I chose to do this at 30 second bursts in a microwave, but if you prefer you can melt in a bowl over a pan of water, just be sure not to burn the chocolate. Meanwhile chop the fudge bars into small chocolate chip size pieces, and crush your pistachios in a pestle & mortar. Once melted, mix in your fudge pieces which will start to melt & marble in the chocolate. When you're happy with your chocolate fudge mix pour in the shot of baileys, this will harden the mixture so you'll have to put in a bit of elbow grease to get it mixed through. Next start taking scoops of the mixture and hand-rolling into balls, before rolling in the crushed pistachio for a crunchy coating. You'll want to refrigerate for an hour before eating if you can wait that long.
