Creamy Spinach, Walnut & Cheddar Risotto11:36
The guys over at Simply Health sent me a box of goodies from Abel & Cole, all which help you along the way to a happy set of teeth, as part of their Cook Your Way To A Healthy Smile campaign. I was surprised by some of the items in there, like cheddar, baking potatoes, and walnuts, ingredients that I'd never really think of helping your teeth grow strong.
I decided to cook up one of our favourite indulgent dishes, risotto. Who doesn't love a big bowl of creamy cheesy risotto right?
What you'll need;
Risotto rice • A good quality vegetable stock • Small glass of white wine • Large handful of grated cheese • Washed fresh spinach • Crushed walnuts.
1. Toast your risotto rice in a large frying pan for a couple of minutes on a medium high heat.
2. Pour in the stock & white wine, a small bit at a time until soaked up by the rice, this process should take around 20 to 25 minutes. Make sure you keep stirring to prevent the rice from sticking & burning.
3. Slice the washed spinach and add to the pan along with the majority of cheese for a couple of minutes until wilted and the cheese is gooey.
4. Serve immediately, topped with the remaining rice, crushed walnuts, and a good sprinkling of black pepper.
