Fantastic Friday Fishcakes

You will need:
4 medium sized potatoes
120g tin of sardines
3tbsp chopped parsley
1/2 a small lemon
2 tbsp mayonnaise
flour for dusting
oil for cooking













These fishcakes and homemade wedges are super easy, cheap and tasty! The ingredients above feed 2 people with giant fishcakes! 

Fishcakes
To start, cut up 2 of the potatoes and boil these until soft in salted water, this should take around 15 minutes. Meanwhile mash up the sardines into a fine mixture, the bones don't need removing, but if you prefer to do this then go ahead! Add 2 table spoons of parsley into the sardine mixture, along with the zest and juice of half a lemon, and the mayonnaise. Mash the boiled potatoes and mix these into the sardine mixture, and then shape this into 4 fishcakes using the flour to prevent them from sticking. Fry the fishcakes for around 3/4 minutes on each side. Done!

Wedges
Wedges are one of the tastiest and easiest things to cook in the world, and once you've done it once, you'll be doing it all the time (seriously, we haven't bought any frozen chips in the last 6 months)! Slice the 2 potatoes thinly into wedges. Place the wedges onto an oiled baking tray, and season well with salt, pepper, oil for browning, and your choice of flavouring, for these wedges I used parsley, but you can use garlic, paprika, etc! Cook the wedges at 180° in a fan oven (see conversions online), for around 25 to 35 minutes depending on how good your cooker is, and how thing you sliced your potatoes. It's a lot of trial and error but once you've worked it out you'll use the same timing every time!
