Easy Egg Fried Rice

You will need:

Rice,
Frozen or fresh peas,
2 eggs,
Salt & Pepper,
Soy Sauce.

Now I'm no Chef, (Liam will confirm this haha), I've just always preferred baking, however there are somethings that I really enjoy cooking, and this is one of them! This rice is so tasty, easy to make, and probably a lot healthier that fried rice from the takeaway!

To make this yummy rice, boil off some white long grain rice with salt until properly cooked. I always make half a cups worth for two people. Next pop the rice in a tub, and stick it in the fridge for around an hour or two (as long as you can wait really).

After a couple of hours fry off some eggs until almost scrambled, and place to the side in a tub along with some cooked peas. Next fry off the rice with a tablespoon of hot oil in a frying pan for a couple of minutes or until heated through, and season with salt and pepper. Add the egg and peas and continue frying for a further minute, and stir in some soy sauce to flavor and colour the rice.

Finally serve up the rice, we had ours with chinese pork which you can make with a packet mix for ease, or simply grab some pre made from the butchers! It's super Saturday night dinner! :)
